- ½ cup cornmeal fine or medium-grind works best
- 2 large eggs lightly beaten
- 1 tsp smoked paprika for depth of flavor
- 1 tsp garlic powder

Set Up the Breading Station
Create a three-step breading process to ensure maximum crunch:
In one shallow bowl, mix together the all-purpose flour , paprika , garlic powder , onion powder , salt , pepper , and cayenne pepper (if using).
In another bowl, whisk the eggs until smooth.
In a third bowl, combine the cornmeal and panko breadcrumbs (if using).
Bread the Pickles
Working one spear at a time:
Roll the pickle in the seasoned flour mixture, shaking off any excess.
Dip it into the beaten eggs, coating it evenly.
Finally, press it into the cornmeal-panko mixture, ensuring the entire surface is covered. Place the breaded spear on a plate or tray and repeat with the remaining pickles.
For deep-frying :
Heat about 2-3 inches of vegetable oil in a deep pot over medium-high heat until it reaches 350°F (175°C).
Carefully add 4-5 pickles at a time, being cautious of splatters. Fry for 2-3 minutes per side, or until golden brown and crispy.
Use tongs to transfer them to a plate lined with paper towels to drain excess oil.
For air frying :
Preheat your air fryer to 375°F (190°C). Lightly spray the basket with cooking spray.
Arrange the breaded pickles in a single layer, leaving space between each spear. Cook for 8-10 minutes, flipping halfway through, until crispy and golden.
