Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs
  • 2 large carrots peeled and sliced
  • 2 celery stalks chopped
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 2 cups egg noodles or gluten-free noodles
  • 1 tsp dried thyme or 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

Sauté the Veggies and Chicken:

  • Set the Instant Pot to the Sauté function. Add olive oil and heat for 1 minute.
  • Add onions, carrots, and celery. Sauté for 3-4 minutes until softened.
  • Stir in minced garlic and cook for 30 seconds until fragrant.
  • Season with a pinch of salt and pepper.

Add the Chicken and Broth:

  • Place chicken on top of the sautéed veggies. Pour in chicken broth, ensuring the chicken is mostly covered.
  • Add bay leaves and thyme. Stir gently to combine.

Pressure Cook the Soup:

  • Seal the Instant Pot lid and set the valve to "Sealing."
  • Select the Manual or Pressure Cook function and cook on high for 10 minutes.
  • Quick Release and Shred the Chicken:
  • Once done, perform a quick release by turning the valve to "Venting." Carefully open the lid.
  • Remove the chicken and shred it using two forks. Return shredded chicken to the pot.

Add the Noodles:

  • Stir in egg noodles. Ensure they are submerged in the broth.
  • Seal the Instant Pot again and pressure cook on high for 4 minutes.

Final Seasoning and Serve:

  • Perform another quick release. Open the lid and stir the soup.
  • Adjust seasoning with more salt, pepper, or thyme if needed.
  • Garnish with fresh parsley or grated Parmesan before serving.
