  • Prep the Feta and Tomatoes: Let feta sit out for 20 minutes to reach room temp. Pat tomatoes dry, toss with a pinch of sugar, and arrange around feta in a baking dish with smashed garlic cloves.
  • Oil and Bake: Drizzle ⅓ cup olive oil over feta and tomatoes. Bake at 400°F (200°C) for 30-35 minutes until feta has golden edges and tomatoes are blistered, rotating dish halfway. Broil 2-3 minutes for extra char if desired.
  • Cook Pasta Perfectly: Boil rigatoni in salted water until al dente. Rinse with cold water to stop cooking, then toss with a drizzle of oil to prevent sticking.
