For the Shortcake Layer:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- 6 tbsp cold unsalted butter cubed
- 1 large egg
- ⅓ cup whole milk
For the Cheesecake Layer:
- 2 cups cream cheese softened
- 1 cup heavy cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
For the Strawberry Topping:
- 2 cups fresh strawberries sliced
- ¼ cup sugar
- 1 tsp lemon juice
Optional Garnish:
- Whipped cream
- Fresh mint leaves
Step 2: Prepare the Shortcake Layer
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
Add cold butter cubes and blend until the mixture resembles coarse crumbs.
Beat the egg and milk together in a separate bowl, then add to the dry ingredients. Stir gently until just combined.
Roll out the dough into a circle that fits a 9-inch springform pan. Press it into the bottom and up the sides to form a crust.
Bake for 15-20 minutes or until golden brown. Cool completely before adding the cheesecake layer.
Step 3: Prepare the Cheesecake Layer
Beat softened cream cheese until smooth.
Add sugar, vanilla extract, and heavy cream; mix until fully incorporated.
Add eggs one at a time, beating well after each addition.
Pour the batter over the cooled shortcake base and spread evenly.
Step 4: Bake the Cheesecake
Bake for 50-60 minutes or until the center is set but slightly jiggly.
Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
Refrigerate for at least 4 hours or overnight.
Step 5: Prepare the Strawberry Topping
Step 6: Assemble and Serve
Remove the cheesecake from the springform pan and place on a serving platter.
Spoon the macerated strawberries over the top, letting the syrup drizzle down the sides.
Garnish with whipped cream and fresh mint leaves.
Tips for Success:
- Use room temperature cream cheese and eggs for a smoother batter.
- Avoid overmixing the cheesecake batter to prevent cracks.
- Consider using a water bath for even baking.
- Let the cheesecake cool slowly and chill thoroughly for the best texture.
- Use fresh, ripe strawberries for optimal flavor and appearance.
