Ingredients
  

For the Shortcake Layer:

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 6 tbsp cold unsalted butter cubed
  • 1 large egg
  • cup whole milk

For the Cheesecake Layer:

  • 2 cups cream cheese softened
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs

For the Strawberry Topping:

  • 2 cups fresh strawberries sliced
  • ¼ cup sugar
  • 1 tsp lemon juice

Optional Garnish:

  • Whipped cream
  • Fresh mint leaves

Instructions
 

Step 1: Preheat Oven

  • Preheat your oven to 350°F (175°C).

Step 2: Prepare the Shortcake Layer

  • In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • Add cold butter cubes and blend until the mixture resembles coarse crumbs.
  • Beat the egg and milk together in a separate bowl, then add to the dry ingredients. Stir gently until just combined.
  • Roll out the dough into a circle that fits a 9-inch springform pan. Press it into the bottom and up the sides to form a crust.
  • Bake for 15-20 minutes or until golden brown. Cool completely before adding the cheesecake layer.

Step 3: Prepare the Cheesecake Layer

  • Beat softened cream cheese until smooth.
  • Add sugar, vanilla extract, and heavy cream; mix until fully incorporated.
  • Add eggs one at a time, beating well after each addition.
  • Pour the batter over the cooled shortcake base and spread evenly.

Step 4: Bake the Cheesecake

  • Bake for 50-60 minutes or until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  • Refrigerate for at least 4 hours or overnight.

Step 5: Prepare the Strawberry Topping

  • Slice strawberries and toss with sugar. Let sit for 30 minutes to macerate.
  • Add lemon juice just before serving.

Step 6: Assemble and Serve

  • Remove the cheesecake from the springform pan and place on a serving platter.
  • Spoon the macerated strawberries over the top, letting the syrup drizzle down the sides.
  • Garnish with whipped cream and fresh mint leaves.
